Biodiversity and Variety

Cereals cultivation starting from the wild plants has increased the biodiversity. Nature catalogue has become richer with new varieties. The catalogue is subjected to two conflicting forces: an ever greater selection removing the less productive varieties and, at the same time, a recovering operation aiming at safeguarding the historical varieties and their proven nutritional value. An example is the revival of cultivation of farro and buckwheat , typical of the Alpine regions.
